Tortilla Soup
This is a great first course to a Mexican meal.
It is also a good choice for lunch on a cold day.
4 cups chicken broth, fat removed
1 medium tomato, chopped
4 green onions, chopped
3 corn tortillas, cut into eighths
Recipe
In a medium saucepan, mix broth, tomato and onion. Cover and bring to a boil. Reduce heat to low. Add tortillas and simmer, covered for 15 minutes.
Yield: 5 cups (4 servings)
One serving: 1 1/4 cups
