Recipe Introduction
I LOVE roasted vegetables! Here's a hearty sandwich that is quick to make and is low, low, low in calories. You can add Tofu for extra protein. Best on a whole grain bread or mushroom caps. All ingrediants are optional; feel free to substitute or omit.
List of Ingredients
- Red, Orange, Yellow, and/or Green Bell Peppers
- Whole Large Mushrooms - Portabello-like
- Tomatoes
- Parnips, Turnips, Carrots
- Lettuce, Spinach, Arugala, Kale, Collard, Mustard Greens
- Beets
- Kernels of Corn - steamed and ground into paste like mustard
- Potatoes, Squash, Eggplant - thinly sliced
- Maramite - to avoid salt
- Ground flax seeds
- Mustard
- Balsamic Vinegar
- Spices and herbs
- Other vegetables of choice!
Instructions
- Slice vegetables into thin slices, as possible. Greens and mushrooms are not sliced.
- Roast over grill or in oven. Assure that potatoes are cooked thoroughly. These can be baked in the oven or eaten "a la dente" from the grill.
- Steam corn kernels until done. Mash into a paste, add water, if necessary. Add to roasted mushroom or bread.
- Assemble vegetables onto mushroom or bread with condiments.
