Italian Flat Bread With Sage

1 package dry yeast
1 cup lukewarm water
3 cups flour
2 teasp. salt
5 tablesp. extra virgin olive oil
(I like Colavita)
12 fresh sage leaves, chopped
Recipe
Combine yeast and water, stir, leave for 15 min. to dissolve.
Mix flour and salt in large bowl, stir in yeast mix and 4 tablesp. of the oil.
Mix and knead till smooth and elastic.
(I use the Kitchen Aid mixer)
Cover and let rise in a warm place until double in volume.
Preheat oven to 400 F and place baking sheet in center of oven.
Punch down dough. Knead in the sage leaves and roll to a 12 inch circle. Leave to rise slightly.
Dimple the surface all over with your finger and drizzle with remaining olive oil.
Slide floured board under bread and slide into the oven onto the hot baking sheet.
Bake until golden brown, about 35 minutes.
Cool on rack.
