    VARIATION: Fresh raspberry pie

    Substitute 6 cups fresh raspberries. Add 2 Tbs lemon juice to the cooked berry mixture. Add 1 Tbs confectioner's sugar to the cream cheese before spreading.



    List of Ingredients





    9 inch baked pie shell

    6 cups strawberries washed and hulled or peaches

    1 cup sugar

    3 Tbs cornstarch

    1/2 cup water

    3 oz. cream cheese softened

    Recipe



    Bake pie shell. Mash enough berries to measure 1 cup. Blend sugar and cornstarch; stir in water and crushed berries.
    Cook, stirring constantly until thick and glossy. Cool. Beat cream cheese until smooth. Spread on bottom of pie shell.
    Fill shell with remaining berries.
    Spread cooked berry mixture over top. Refigerate until set (at least two hours).
