    Scandinavian Coffee Fruit Cake

    Recipe Introduction

    I always take one cake and wrap it in a brandy soaked cloth and then seal in aluminum foil for about a week or more and use this one on Christmas. Some people like to use a wine soaked cloth.

    List of Ingredients

    1# butter,
    2c.light brown sugar,
    9 eggs,
    1 c. strong coffee
    4 c. flour
    1 tsp soda,
    1 tsp salt,
    1 tsp mace,
    1 tsp nutmeg,
    2 tsp cinnamon,
    1 lb candied cherries - leave whole,
    1 lb candied fruit,
    1 lb almonds or walnuts,
    2 lb dates,
    2 lb seeded raisins,
    1/2 pint of semi sweet wine or apple cider




    Recipe

    Cream butter and sugar well. Add eggs and mix. Stir in coffee. Sift flour, soda, salt and spices together. Save out some of the flour and add the rest to the mixture and blend well. Separate the fruits, including the seeded raisins and dates and flour them. This is necessary to keep them from remaining in clumps in the cake. Now mix in nuts, floured fruits, and add wine. Grease bread pans and line with waxed paper. fill to a depth of two or three inches with the mixture. Garnish the tops with nuts and fruits as personal preference dictates. Set oven at just under 300 degrees. To bake set fruit cake pans in a cookie sheet containing water and bake three to four hours in a very slow oven. This keeps the cake moist. ( the cake may also be steamed)
