Last year I used zucchini instead of cucumbers, they came out great and you couldn't tell the difference.

List of Ingredients
4 Quarts of cucumbers sliced thin
4 teaspoons salt
4 tablespoons turmeric
2 tablespoons celery seed
2 tablespoons mustard seed
2 green peppers chopped fine
4 medium onions sliced
3 cups sugar
3 cups vinegarRecipe
Combine everything in kettle,boil gently until cukes are almost tender.put in jars and seal as usual.These are quickly prepared and need no soaking.
