Recipe Introduction
This is a very favorite soup of mine. It is exactly what it says, "Hearty".
List of Ingredients
1 24 Oz jar Randall Great Northern Beans (Randall is the brand I can get here, use whatever brand you have)
1 24 Oz jar Randall Pinto Beans
6 Cups chicken Stock (46 oz can) or homemade
2 Lbs. Uncooked Chicken Thighs **
1 Cup chopped onion
1 Cup chopped Celery
2 Garlic Cloves, minced
3 T Minced parsley
1 teaspoon Dried rosemary
1 teaspoon Basil
1/2 teaspoon Dried thyme
1/2 teaspoon Dried Oregano
1 teaspoon Salt (I use less)
1/4 teaspoon Pepper
1 28 Oz. Can whole peeled tomatoes, chopped
2 Cups ham cubes
1/2 Lb. Polish sausage
Recipe
In large kettle pour chicken stock. Add chicken, onions, celery, garlic, parsley, rosemary, basil, thyme, oregano, tomatoes, salt and pepper. Bring to boil, reduce heat and simmer 45 minutes or until chicken is done. Meanwhile, place sausage in skillet, cover with water and simmer 15 minutes. Drain sausage, remove skin and cut into 1.4" slices. Add slices to soup. Debone chicken and cut into pieces. Return chicken to soup. Add ham and simmer 10 minutes. Add beans and simmer 10 minutes.
** 3 Cups cooked chicken may be substituted for uncooked thighs. If substituting : reduce first cooking time 15 minutes.
