    Great at Harvest Time.
    Serve with a crusty bread and a salad for a light summer meal

    List of Ingredients




    About 4 cups of new young potatoes freshly dug(cut in half, and then sliced in 1/4 inch slices
    Some Leeks, or fresh onions from the garden (finely chopped)
    a couple of cloves of garlic just pulled from the earth
    about 4 Tablespoons of butter
    a cup of cream or milk
    4 cups of veggie stock (I guess you could use chicken stock)
    Any seasoning you like with potatoes salt, pepper, thyme, basil, sage... anything that you like
    chives and grated cheddar to garnish the top

    Melt butter in large soup kettle,
    add the garlic and onion or leeks to the butter and cook gently until the onion cooked soft. Careful not to burn the butter.
    Add potatoes, and the stock, bring to boil, reduce heat and simmer until potatoes are cooked soft.
    Take a potato masher, and mash the potatoes a bit. Not to mashed consistance, but just mushed up a bit.
    Add milk, and bring the heat back up, but do not boil.
    Then pour in bowls, and garnish with chopped chives, and grated cheddar.
