    Barbara B's Potato Rolls

    My friend, Barbara, gave me this recipe almost 20 years ago. The first time I had them she was serving them at an open house with baked ham and a Parmesan mayonnaise. The sandwiches were so yummy that I asked for her recipe and have been making these rolls ever since.

    List of Ingredients

    1 pkg yeast.
    1/4 c. warm water
    1 c. milk
    1 c. mashed potatoes
    1/2 c. butter or margarine
    3/4 c. sugar
    3 beaten eggs
    *6 cups flour minus 6 teaspoons
    *6 t. gluten flour
    1 t. salt

    Recipe

    Dissolve yeast in warm water.

    Place milk, butter, mashed potatoes and sugar in a saucepan. Heat toghter. Cool slightly and add eggs. Allow to cool to room temperature. Add yeast mixture and flour.
    (*Removing 6 teaspoons of regular flour and replacing it with 6 teaspoons gluten flour is an optional step, but the rolls will rise much higher.)

    Knead several minutes on a floured surface, or divide dough in half and knead each half for 8-10 minutes in your bread machine.

    Roll to 3/4 to 1 inch thikness on floured surface. Cut into rounds. Let rise 3 to 4 hours. Rolls will double in size.

    Bake at 350 degrees until golden brown.
