    This is really a snack cake that you can put together in a few minutes....and in one pan, yet! It doesn't sound very good, but believe me, it is. The basic cake is great for people with allergies to egg or milk products.

    List of Ingredients

    1 1/2 c. flour
    1 c. sugar
    1/2 t. salt
    1 t. baking soda
    3 T. cocoa
    6 T. vegetable oil
    1 T. cider vinegar
    1 t. vanilla
    1 c. cold water

    Recipe

    Preheat oven to 350 degrees. Sift all dry ingredients into ungreased 9"x 9" pan. Make a well in the center. Pour in oil, vinegar, vanilla, and cold water. The mixture will begin to bubble. Mix well with a fork.
    Bake 25 to 30 minutes. Frost or sprinkle with powdered sugar.

    OR

    For a spice wacky cake, substitute 1 T. pumpkin pie spice for the 3 T. cocoa powder. If you don't have pumpkin pie spice, use 1 1/2 tsp. cinnamon, 1/2 tsp. nutmeg, 1/2 tsp. ginger, 1/4 tsp. cloves. Add about 1/2 c. raisins and frost with an icing of 1 to 1 1/2 tsp.lemon juice, powdered sugar, pinch of salt and milk to your desired consistency.
