Barbecued Chicken Chili

Recipe Introduction
I just threw this together one day after having oven baked chicken seasoned with mesquite seasoning the night before. It was sensational. I skipped dessert so that I could have more chili.
List of Ingredients
1 15 oz. can fire-roasted tomatoes
1 c. frozen onion, pepper, celery mix
2 15 oz. cans kidney, pinto beans, drained
1 15 oz. can black beans or great northerns drained and washed.
1-2 c. frozen seasoned southwestern vegetable mix (corn, black beans, peppers)
3/4 c. to 1 c. bottled barbecue sauce
1/2 baked or rotisserie chicken (supermarket rotisserie chicken works great. I have used both plain baked chicken and mesquite flavored) or more for a meatier chili, meat picked clean.
1 c. water
3 T. chili seasoning mix, such as Chili-O, or to taste
Recipe
Saute' onion mixture with southwestern veggie mix in 1 tablespoon oil. Add tomatoes, barbecue sauce and chicken. Simmer for several minutes to let flavors develop. Pour into crockpot. Add drained beans and seasoning mixture. After adding water, cover crockpot and simmer for 3-4 hours.
Serve with crackers and topped with a little shredded cheddar.
