6 eggs
1 can Chinese vegetables, drained
1/2 medium onion, chopped
2 chicken breast, cooked and flaked
2 T. soy sauce
2 T. cornstarch
1/4 t. white pepper
Peanut oil for frying
1 can chicken broth
1 T. cornstarch
2 T. soy sauceRecipe
Combine eggs, vegetables, onion, flaked chicken breast, soy, cornstarch and pepper.
Heat peanut oil in wok or large frying pan. Drop mixture as pancakes into oil. Brown well, turn and brown on second side.
In separate saucepan add combine broth, cornstarch and soy sauce. Simmer until thickened. Add more cornstarch diluted in water if more thickening is needed. Salt and pepper to taste.
Serve 2 to 3 pancakes topped with sauce. Serve with fried rice.
