Recipe Introduction
Carol is a great cook. I had this at her home for lunch one day, and I think that it is as good as any I've eaten in a good Italian restaurant.
List of Ingredients
2 to 3 lbs. boneless, skinless chicken breasts.
8 ozs. fresh mushrooms
1 can fatfree chicken broth
4 oz. (1/2 c.) Marsala wine
Olive oil for browning
1-2 T. butter
Italian bread crumbs
1 egg beaten with milk
Salt, pepper & garlic to tasteRecipe
Pound chicken thin between layers of plastic wrap, dip in egg mixture, then bread crumbs and set aside. Saute' in olive oil and sprinkle with garlic powder to taste. Chicken should be browned on both sides, about 5 minutes per side, then placed in a single layer in an oven-proof baking dish. Add butter to pan, and saute sliced mushrooms with garlic powder. Add 1/2 can of chicken broth and marsala wine. Simmer a few minutes to ruduce. Pour over chicken. Bake at 300 degrees about 15 more minutes. Really good!
