    My sons love pasta but hate vegetables. I don't understand why they never caught on to the fact that these canneloni have spinach in them. Oh, well....

    List of Ingredients




    1 lb. manicotti noodles
    1/2 of a 10 oz. pkg of frozen spinach
    1 lb. ground round, cooked and well drained
    1/2 tsp. garlic powder
    1 tsp. Italian seasonings
    1/2 c. grated Parmesan cheese
    1, egg beaten
    1 medium jar Prego or other good quality spaghetti sauce
    1 1/2 c. white sauce (recipe follows)

    Cook manicotti noodles just until al dente. Make a slit in each noodle, drain and set aside. Brown beef with onion, garlic powder and Italian seasonings. Drail well and cool meat until warm but not hot. In food processor combine meat, parmesan, egg and well-drained spinach and 1/4 cup of spaghetti sauce. Process until fairly smooth.

    Fill noodles with about 2-3 tablespoons of meat mixture.
    Place in baking dish, that has been prepared with a thin layer of spaghetti sauce, with cut side of noodle down.

    Top with red sauce, then white sauce.

    White Sauce Recipe:
    1 c. half&half
    1 can chicken broth
    2 T. butter
    1-2 T. flour

    Make a roux with butter and flour, stirring constantly over medium heat until flour mixture is a creamy yellow shade. Add chicken broth and half&half. Bring to a full boil so that mixture will thicken. Add 1-2 tbs. of Parmesan for extra flavor, if desired.

    Pour over canneloni. Bake in oven at 350 degrees 25-30 minutes.
