Arizona Mountain Bean Soup

I think this came from a magazine many years ago...at least 22 years. It's really good and a little different from most of the soups I've made over the years.
List of Ingredients
1 1/4c. dry pinto beans
6 slices bacon, chopped
3 medium onions, finely chopped
2 cloves garlic, minced
1 1/2t. ground cumin
1 16ox. can tomatoes, chopped
1 1/2c. brown or white instant rice
1 1/2 t. salt
1/2 t. ground paprika
1 medium pepper, any color, peeled, seeded and chopped
Recipe
Rinse and pick over beans. Combine with 3 cups water; cover and soak overnight. Do not drain. Simmer, covered 2 hours. Drain, reserving 2 cups liquid. Cook bacon until almost crisp. Drain all but 2 tablespoons bacon drippings. Add onion, garlic. Cook until onion is tender, but not brown. Stir in cooked beans, tomatoes, rice, peppers,and seasonings. Add reserved bean liquid and 2 cups water. Bring to a simmer and cook 1 hour, stirring occasionally.
