Southwestern Taco Soup 10 Minute Supper

List of Ingredients
2 15oz. cans chicken broth
1 jar medium salsa
1/2 instant rice
1/2-1 c. corn kernels, fresh or frozen
1/2-1 c. diced cooked chicken
1 t. dried cumin
1 c. crushed corn chips
Shredded cheddar or jack cheese
Sour cream (optional)
Extra corn chips
Recipe
In medium saucepan, heat chicken broth and salsa to a simmer. Add rice, corn, chicken and cumin. Simmer an additional 5 minutes. Add corn chips. Simmer 5 more minutes to allow corn chips to thicken soup. Serve topped with cheese, sour cream and a few more chips, if desired.
