    The members of St. Roch's Parish in St. Louis make these for parish families when there is a death in the family. They call them "Funeral Beans.", However, when my real estate partner, Carol, and I put together a small cookbook for clients at Christmas, we renamed them as above.

    List of Ingredients




    1 lb., 14 oz. can pork and beans
    1 ol., 4 oz. can red kidney beans
    1 lb. can small green lima beans
    3 medium onions, sliced thin
    2 cloves garlic, minced
    6 slices bacon, cooked and crumbled
    1/2 c. brown sugar
    1/2 c. catsup
    1/4 c. white vinegar
    1 t. dry mustard

    Recipe



    Cook bacon and set aside. Use bacon fat to fry garlic and onions, Add sugar, vinegar, catsup and dry mustard. Drain kidney and limas and mix all beans together in large baking dish. Add bacon-sugar sauce to beans. Casserole may be refrigerated at this point.

    Bake in 350 degree oven for 1 hour and 15 minutes. Bake covered for a saucier dish, uncovered if you prefer your beans to have a dryer consistency. Stir before serving.

    Note: You may adjust the amount of bacon if you desire a smokier flavor.
