    List of Ingredients


    • cooking spray
    • 2 1/2 pounds eye of round roast..discard fat..cut into bite sized pieces
    • 1 teaspoon olive oil
    • 1 large onion, finely chopped
    • 5 1/2 cups fat free no salt beef broth(plus 2 cups??)
    • 1 teaspoon dried thyme
    • 1 teaspoondried marjoram. crumbled
    • 1 medium dried bay leaf
    • 1 pound red potatoes, cut into chunks
    • 2 large carrots, sliced
    • 8 oz button mushrooms, quartered
    • 1 medium red bell pepper, diced
    • 4 med green onions, thinly sliced
    • 1.4 c plus 2 tbsp constrach
    • 1/4 cup no salt tomato paste
    • 1 teaspoon dried italian seasoning, crumbled
    • 3/4 teaspoon pepper
    • 1/2 teaspon salt


    Instructions


    1. Lightly spray stockpot with cooking spray. Heat over med hi. Cook beef for 2 to 3 minuteson each side until browned. Transfer to large plate
    2. In same pot, heat oil, swirling to coat the bottom. Cook the onion for 3 to 4 minutes or until soft stirring frequently
    3. Stir in beef, any pan juices, 5 1/2 c beef broth, 1 tsp thyme, marjoram and bay leaf. Increase heat to high and bring to a boil. Reduce heat and simmer, covered, for 1 hours 30 min, or until the beef is tender
    4. Stir in potatoes, carrots, and mushrooms. Simmer, covered for 30 minutes
    5. Stir in bell pepper and green onion
    6. In med bowl, whisk together cornstarch, tom paste, remainion 1 tsp thyme, italian seasoning and remaing 2 cups broth. Pour into the stew. Increse heat to hi and bring to boil, stirring constantly. Reduce heat to low.
    7. Cook for 5 minutes, or until sauce is thickened, stirring constantly. Discard bay leaf
