List of Ingredients
- cooking spray
- 2 1/2 pounds eye of round roast..discard fat..cut into bite sized pieces
- 1 teaspoon olive oil
- 1 large onion, finely chopped
- 5 1/2 cups fat free no salt beef broth(plus 2 cups??)
- 1 teaspoon dried thyme
- 1 teaspoondried marjoram. crumbled
- 1 medium dried bay leaf
- 1 pound red potatoes, cut into chunks
- 2 large carrots, sliced
- 8 oz button mushrooms, quartered
- 1 medium red bell pepper, diced
- 4 med green onions, thinly sliced
- 1.4 c plus 2 tbsp constrach
- 1/4 cup no salt tomato paste
- 1 teaspoon dried italian seasoning, crumbled
- 3/4 teaspoon pepper
- 1/2 teaspon salt
Instructions
- Lightly spray stockpot with cooking spray. Heat over med hi. Cook beef for 2 to 3 minuteson each side until browned. Transfer to large plate
- In same pot, heat oil, swirling to coat the bottom. Cook the onion for 3 to 4 minutes or until soft stirring frequently
- Stir in beef, any pan juices, 5 1/2 c beef broth, 1 tsp thyme, marjoram and bay leaf. Increase heat to high and bring to a boil. Reduce heat and simmer, covered, for 1 hours 30 min, or until the beef is tender
- Stir in potatoes, carrots, and mushrooms. Simmer, covered for 30 minutes
- Stir in bell pepper and green onion
- In med bowl, whisk together cornstarch, tom paste, remainion 1 tsp thyme, italian seasoning and remaing 2 cups broth. Pour into the stew. Increse heat to hi and bring to boil, stirring constantly. Reduce heat to low.
- Cook for 5 minutes, or until sauce is thickened, stirring constantly. Discard bay leaf
