    RANGE BRUNCH MUFFINS

    2 large oranges
    1/3 cup orange juice
    6 T. butter at room temp & cut into chunks
    1 large fresh egg
    1/2 cup seeless golden rasins, optional
    1 T. Light rum
    1 & 1/2 cup all purpose flour
    3/4 cups sugar
    1 tsp. BP
    1 t. BS
    1 t. salt

    PREHEAT OVEN TO 400 degrees
    Grate the oranges to get the zest and set zest aside. You will need 2 T. for the glaze.
    remove and discard the white orange pith and cut the orangee into quarters, and remove the seeds.
    Using a blender (very easy) combine the zest, orange juice, orange, butter, egg, raaasinn & rum, and blend for about 5 seconds.
    Transfer mixture to a large bowl.
    In another bowl, sift the dry ingredients, then add it to the orange mixture and stir with a wooden spoon until JUST blended. DO NOT OVER MIX
    Spoon into a well buttered & floured 12 cup muffin tin. Fill each cup two thirds full.
    Bake until muffins are golden, about 15-20 minutes.

    While muffins are baking make the glaze:

    ORANGE GLAZE
    1 & 1/2 cup powdered sugar
    3 T. fresh squeezed orange juice
    2 T. orange zest

    Mix together well, then drizzle over the warm muffins on a rack.
