Merideth's Zucchini Crisps

This is a great vegetarian appetizer that is easy to dress up with some goat cheese and fresh basil.

zucchini, sliced 1/4"
1 cup
COARSE white bread crumbs, toasted
1 tsp.
salt
1/4 tsp.
black pepper
1/2 tsp.
fresh thyme, finely chopped
1
egg, beaten
1/2 - 1 cup olive oil
goat cheese (optional)
fresh basil leaves
1. Combine the bread crumbs, salt, pepper, and thyme.
2. Dip the zucchini slices in the beaten egg and then dredge in the bread crumb mixture.
3. Heat the skillet over medium-high heat (electric skillet to 360º F). Add enough olive oil to coat the bottom of the pan.
4. Fry breaded zucchini slices in batches in a single layer until golden brown, turning once.
5. Drain excess oil on a paper towel.
6. If desired, serve the slices warm with a crumble of goat cheese and garnished with a fresh basil leaf.Recipe
