    Sweet Potato Chocolate Cake
    Makes one 9-inch cake

    2/3 cup cooked mashed sweet potato (1 medium sweet potato)
    1¼ cups all-purpose flour
    ¼ cup unsweetened cocoa
    1 teaspoon baking powder
    1 teaspoon baking soda
    1/8 teaspoon salt
    ½ cup low-fat buttermilk
    ½ teaspoon vanilla extract
    ½ cup canola oil
    ½ cup sugar
    2 large eggs

    Frosting:
    2 tablespoons unsalted butter, softened
    2 tablespoons reduced-fat sour cream
    1½ cups confectioners' sugar
    1½ tablespoons unsweetened cocoa
    ¼ teaspoon vanilla extract
    1 tablespoon milk or sour cream to soften

    1. Preheat the oven to 350°F. Lightly grease a 9-inch round cake pan with butter.

    2. Peel and chop the sweet potato into 1-inch chunks. Boil in a pot with just enough water to cover until tender, about 5 minutes. Drain, mash with a fork (or put through a ricer), and let cool.

    3. Into a bowl or onto waxed paper, sift together the flour, cocoa, baking powder, baking soda, and salt.

    4. In a small bowl, combine the buttermilk, vanilla, and 2/3 cup of the cooled sweet potato until well blended.

    5. In a large mixing bowl with an electric mixer on medium-high speed, beat the oil while slowly adding the sugar. Add the eggs, 1 at a time, and continue beating for 5 minutes.

    6. With the mixer on the lowest speed, add the sweet potato mixture followed by the flour mixture.

    7. Pour the batter into the cake pan. Bake for 25 minutes or until a toothpick inserted in the center comes out clean. Cool completely in the pan on a wire cooling rack.

    8. Meanwhile, prepare the frosting. In a medium bowl with an electric hand mixer, beat the butter and sour cream. Mix in the confectioners' sugar, cocoa, and vanilla. Beat until smooth, 3 to 4 minutes. Adjust the consistency, if necessary, by adding a little milk or sour cream.

    9. Cover the top of the cooled cake with the frosting.
