    Great flavor and low carb

    List of Ingredients




    3 lbs. boneless chicken breasts
    1/4 red onion, diced
    1 t. salt
    1 t. pepper
    2 t. garlic salt
    2 t. Adobo seasoning
    14 oz. can diced tomatoes with green chilies, drained
    2 cups shredded cheddar cheese
    3 ounces cream cheese
    1 cup sour cream

    In deep, covered skillet, simmer chicken breasts and onion in 1 cup water with salt, pepper, garlic salt and Adobo seasoning.

    Cook until chicken is no longer pink, let cool for 10 min, then cut into 1/2 inch cubes.

    Place the chicken mixture on the bottom of a baking dish you've sprayed with non-stick cooking spray,cover with tomatoes, including chilies, and a thin layer of cheddar (1 cup), followed by a layer of cream cheese, and finally a layer of sour cream. Top with the remaining cheddar cheese.

    Bake at 350 for at least 15 min. or until cheese has thoughly melted and ingredients combine.

    Makes 6 servings.

    What I did: I mixed all the spices together and then sprinkled on both sides of the chicken breasts (I had 5 plump breasts). Put in pan, added onion on top and then water.

    It took about 15 mins to cook chicken (they were BIG breasts Wink)

    Cut up chicken as per recipe. Drained liquid from the skillet and added the red onion on top of the chix. Threw the liquid away.

    Used 1 1/2 cans of rotelle (drained)

    As for the cream cheese. I used 4 oz. Sliced the cream cheese and put it on top(couldn't figure out how to spread it. Roll Eyes)

    ... and then followed the directions as per above.
