    Mashed Potatoe Casserole

    List of Ingredients




    * Potatoes ( 8 or 9)
    * Cream Cheese (8oz)
    * Sour Cream (8oz)
    * stick of butter
    * Chives ( 2-3 T.)
    * salt and pepper to taste

    Directions:

    1. Peel and cut up potatoes and boil until tender, drain.
    2. Add 1 stick butter and beat with mixer until smooth.
    3. Add cream cheese, sour cream and continue beating until smooth.
    4. Add chives and salt.
    5. Pour into 13 X 9 inch pan. Let cool and then refrigerate.
    6. Next day remove from refrigerator and let sit till not too cold. Bake at 325 degrees for around 20 minutes or until bubbles around side.

    These are a hit and have been at my home for years. The advantage is you can make them the day before Thanksgiving and you have creamy mashed potatoes when warmed up!
