    These are one of my favorite cookies and I have been making them for about 20 years. They are like a soft ginger snap type cookie. If you like them a little crisper, bake them for a minute longer.

    Molasses Sugar Cookies

    1 1/3 cups shortening -- melted
    2 cups sugar
    1/2 cup molasses
    2 eggs
    4 1/2 cups flour
    3 1/2 teaspoons baking soda
    1 teaspoon ground cloves
    1 teaspoon ground ginger
    1 teaspoon salt
    2 teaspoons cinnamon
    1/2 cup sugar -- for coating cookies

    Combine melted shortening, 2 cups sugar and molasses; add eggs. Stir together remaining ingredients, then gradually blend into molasses mixture. Chill in refrigerator. Scoop out dough using #40 scoop or roll into 1" balls. Roll in sugar and place on ungreased baking sheets. Bake at 350 degrees for 11 to 12 minutes. DO NOT OVERBAKE. They should still be puffed and look a little underdone when you take them out, they finish cooking as they cool. Let stand on baking sheet for a minute, then remove to wire rack to finish cooling. Makes 4 1/2 dozen cookies.

    I use a small, 1" scoop, like a baby ice cream scoop, for all of my cookies. You can find them at restaurant supply stores, which are usually open to the general public. The one I use is a #40 and they come in many sizes. I also use a larger one, the size you use for an ice cream scoop, for my muffins and cupcakes. (I use my cookie scoop for mini muffins.) When you use a scoop, they all come out the same size and cook for the same amount of time. You can also find sizes for making meatballs, etc.
