This came from the allrecipes.com site and is the BEST peanut butter cookie recipe I've found.


List of Ingredients






1 cup butter, softened
1 cup white sugar
1 cup brown sugar
2 eggs
1 egg yolk
2 tsp vanilla extract
18 oz jar peanut butter
2 cups flour
1 tsp baking soda
1/2 tsp salt
1 cup chopped peanuts (I've actually left them out)

n large bowl cream butter and sugars until smooth. Add eggs, yolk, vanilla; mix u ntil fluffy. Stir in peanut butter. Sift together flour, baking soda, salt; stir into peanut butter mixture. Then stir in peanuts. Chill dough 2 hours. Preheat oven to 350 degrees. Lightly grease cookie sheet. Roll dough into walnut-sized balls. Place on cookie sheet and flatten slightly. Bake 12-15 minutes. Cool on wire rack.
