    These are so good. My kids can't get enough of them. The dressing mix gives a nice flavor.

    List of Ingredients




    1\2 cup mayo
    1 envelpe Good Seasons Italian salad dressing mix
    2 Tbs. mustard
    2 cans (6oz) salmon (remove bones)
    25 finely crushed ritz crackers, divided
    (I use italian bread crumbs instead)
    2 Tbsp chopped green onion


    Mix mayo, dressing mix and mustard in medium bowl until well blended. Add salmon and 1/2 of thr cracker crumbs and onion; mix lightly.

    Shape into 16 (1/2 inch thick) patties; coat with remaining cracker crumbs. (I make 8 larger patties)

    Cook in batches in large nonstick skillet on medium heat 2 minutes on each side or until browned on both sides and heated through.
    (I bake them in the oven instead at 350 for 20 minutes flipping halfway through)

    *This is great for left over salmon. We cook extra salmon just so we can make these. You have to do some guess work on the amount of salmon and adjust the other ingreadents.
