t is really good and healthy. It's a WW recipe. 1 pt/cup with the chicken it's 2pts/cup.
I topped it with a bit of cheese too. YUM!
List of Ingredients
1 large onion, chopped
1 boneless skinless chicken breast - diced
1 tsp cumin
1 package reduced sodium taco seasoning mix ( I used Chi Chi Fiesta)
2 cups whole kernel corn, frozen (or 2 medium cans)
1 15 oz can chicken broth
1 15 oz can black beans, (DO NOT DRAIN)
1 15 oz can white beans, (DO NOT DRAIN)
1 can fat-free refried beans
1 can diced tomatoes, (Mexican style) *Rotel
1 can diced tomatoes, (any style)
**Optional - 1-package Perdue shortcuts roasted chicken strips
DIRECTIONS:
Sauté onions until soft in a large sauce pot sprayed with pam, add chicken breast, cumin and cook through. Start opening cans; begin with the broth and refried beans and then dump everything else in. Bring to a boil and then simmer 30-40 minutes.
