List of Ingredients
1 potato (6 oz.) baked
1 ½ oz. Mozzarella cheese, shredded and divided
¼ c. each tomato sauce and part skim ricotta cheese
1/8 t. each oregano and garlic powder
2 t. grated parmesan cheese
Preheat oven to 450. Cut potato in half lengthwise. Scoop out pulp from potato halves into bowl, leaving ¼” thick shells. Add 1 oz. Mozzarella cheese, the tomato sauce, ricotta cheese, oregano and garlic powder to potato pulp and stir to combine. Spoon half of potato mixture into each reserved shell; top each with half the remaining mozzarella cheese and half the parmesan cheese. Set potato shells in 1 qt. Casserole and bake until thoroughly heated, about 10 minutesRecipe
