    5-Cheese Pizza

    Prepared in: Calphalon 13" Perforated Pizza Pan

    Makes 1 large pizza.

    1 ball basic pizza dough, or 1 preformed large pie
    2 tablespoons extra virgin olive oil
    2 tablespoons shredded smoked Gouda cheese
    3/4 cup shredded mozzarella cheese
    1/2 cup shredded Fontina cheese
    1-2 plum tomatoes, sliced 1/8" thick rounds
    3 ounces "Buffalo" mozzarella, cut into 24 1" pieces
    1/2 cup grated or shaved Romano cheese
    2 tablespoons shredded fresh basil leaves

    Preheat the oven to 500 degrees.

    Brush the pie dough with the olive oil. Evenly place the Gouda, mozzarella, and Fontine cheeses on the pie. Place the tomato slices over the cheeses, spaced evenly apart. Top the tomatoes with the buffalo mozzarella, then half the Romano. Bake until the crust is golden brown. Remove from the oven, sprinkle with the basil and serve hot.
