Seafood Zuchinni Boats
1 1/3 C Herb Seasoned Stuffing Mix (like Stove Top) dry
1/2 C shredded Mozzarella cheese
1/3 C hot water
2T chopped onion
3 T melted butter
cracked pepper to taste
1 small can crabmeat drained (tuna sized can)
6-8 medium to large size precooked shrimp chopped
fresh chopped parsley
Mix all together.
Cut zuchinni lengthwise down the center. Use a spoon to remove the seed center, leaving a zuchinni boat "shell". Fill cavity w/ stuffing mix heaping up a bit.
Top with another sprinkle of mozzarella and a small pat of butter.
Place zuchinni boat on a piece of heavy duty foil and bring side up around boat, but do not cover!
Put boats on hot grill (approx.) 350 for 30 minutes or till golden and zuchinni is fork tender.
These reheat nicely too for leftovers.
This will make filling for several medium sized zuchinnis.Recipe
