You can semi-freeze this for an lemon ice box type pie
List of Ingredients
- 1/3 C Strawberry jam
- 1 Prepared graham crust (9 inch)
- 4 Oz. Cream cheese softened
- 1 T sugar
- 2 Tubs (8 ozs. each) Cool Whip, thawed, divided
- 1 1/2 C cold milk
- 2 pkg. (4 serving size each) Lemon instant pudding mix
Instructions
- Spread jam on bottom of crust.
- Mix cream cheese and sugar in a bowl with wire whisk until smooth.
- Gently stir 1/2 tub of whipped topping into cream cheese mixture. Spread over the jam.
- Pour milk into a large bowl. Add pudding mixes; beat with wire whisk 1 minute or until blended. Gently stir in the remaining 1/2 tub whipped topping. Spread over cream cheese layer.
- Refrigerate 4 hours or until set. Garnish with whipped topping.
- Makes 8 servings.
Final Comments
Freeze until of a semi-frozen consistency (like old-fashioned lemon ice box pie!)
