Watermelon Wedges

My own recipe, I use either home made sugar cookie dough or Pilsbury packaged refrigerated dough
List of Ingredients
- 3 3/4 C All purpose flour
- 1 t Baking powder
- 1/2 t Salt
- 1 C Real butter (do not use margarine), softened
- 1 1/2 C Sugar
- 2 Eggs
- 2 t Real vanilla extract (not just flavored)
- 6 Drops red food coloring
- 1 C Miniature semi-sweet chocolate chips
- GLAZE:
- 1 1/2 C powdered sugar, sifted
- 2 T water
- 15-20 drops green food coloring
Instructions
- Sift flour, baking powder, and salt together ina bowl, set aside.
- Beat butter, sugar, eggs, vanilla, and red food coloring in a bowl with electric mixer until fluffy. Gradually add the flour mixture and stir with wooden spoon until thoroughly mixed. Cover dough with plastic wrap and chill for two hours.
- Preheat oven to 400 degrees F. On a lightly floured surface, roll out dough to 1/4" thick. Cut our circles with a cookie cutter or other round object. Place circles on ungreased cookie sheet. With a butter knife carefully slice each circle in half and separate by at least 1/2" to allow for expansion during baking. Gently press mini semi-sweet chips into each semi-circle.
- Bake for 6-8 minutes. Cookies will be done when edges are lightly browned. Do not allow cookies to get too brown. Remove and allow cookies to cool on cookie sheets for 5 minutes. Remove from cookie sheets to a cooling rack to cool completely.
- GLAZE:
- In a bowl combine all ingredients to form a glaze. You may add drops of water to thin the glaze if it is too thick.
- To decorate cookies, roll the round edge of the cookie on the glaze. Allow excess to drip off into the bowl. Place cookies back on foil until glaze dries.
