Chicken in Portabella Cream

Recipe Introduction
I was at a loss as to what to make for dinner one night and this just became something delicious on accident!
List of Ingredients
- 8 Boneless/skinless chicken breasts, pounded flat
- 16 Slices swiss cheese
- 16 Broccoli stalks, cleaned and trimmed
- Cooking spray (Pam)
- Toothpicks
- 1 lb Portabella mushrooms, sliced
- Butter
- 1 Onion, chopped
- 3/4 C chicken broth
- 1/2 Heavy cream
Instructions
- Brown flattened chicken breasts on both sides in pan using cooking spray.
- Remove from pan and let cool slightly so that you can handle them.
- Next, lay 2 slices of swiss cheese on each chicken breast.
- Place a broccoli stalk at one end of each breast and roll up so that cheese and broccoli is inside, secure with tooth picks.
- Place rolls in a baking dish seam-side down. Cover with foil and bake for 15-20 minutes at 350 degrees.
- While Chicken is baking, make the mushroom sauce as follows:
- Saute onions in the same pan you sauted the chicken in, add about 3 T of butter, cook until crisp tender. Add mushrooms to the same pan and saute, scraping up the leftover bits of browned chicken.
- Add chicken stock and keep scraping pan to get all the brown bits.
- Reduce sauce until about 1/2 the volume.
- Add cream at this point and heat thoroughly.
- Uncover the chicken rolls and pour the sauce over the chicken rolls.
- Return chicken to the oven and bake for an additional 10-15 minutes more without the cover, allowing them to brown a little.
- Serve chicken with extra sauce. Makes 4 good sized servings.
