List of Ingredients
- 8 Boneless/skinless chicken breasts, pounded thin
- 1 lb of mushrooms of your choice
- 1 Large green pepper, cut into strips
- 1 Large onion, cut into thin slices
- 16 ozs Monterey jack cheese, shredded
- 16 ozs Sharp white cheddar cheese, shredded
- 2 T Chicken grill spices (store bought)
- 2 T butter
Instructions
- Pound chicken until flat with mallet.
- Cover chicken in spices and grill until no longer pink and juices run clear.
- Saute vegetables in butter salt and pepper until mushrooms have not yet lost their color. Onions should be almost tender.
- Place grilled chicken breasts on baking sheet. Cover each breast with sauted vegetables.
- Smother each chicken breast with 2 ozs of cheddar and 2 ozs of jack cheese.
- Bake at 350 degrees until cheese is melted.
- Let cool for 5 minutes and serve.

This recipe is wonderful and satisfying for low carbers, serve with a salad and you have an easy meal
