    Easy, wonderful, thoroughly enjoyable!


    List of Ingredients


    • 8 Boneless/skinless chicken breasts, pounded thin
    • 1 lb of mushrooms of your choice
    • 1 Large green pepper, cut into strips
    • 1 Large onion, cut into thin slices
    • 16 ozs Monterey jack cheese, shredded
    • 16 ozs Sharp white cheddar cheese, shredded
    • 2 T Chicken grill spices (store bought)
    • 2 T butter


    Instructions


    1. Pound chicken until flat with mallet.
    2. Cover chicken in spices and grill until no longer pink and juices run clear.
    3. Saute vegetables in butter salt and pepper until mushrooms have not yet lost their color. Onions should be almost tender.
    4. Place grilled chicken breasts on baking sheet. Cover each breast with sauted vegetables.
    5. Smother each chicken breast with 2 ozs of cheddar and 2 ozs of jack cheese.
    6. Bake at 350 degrees until cheese is melted.
    7. Let cool for 5 minutes and serve.


    Final Comments


    This recipe is wonderful and satisfying for low carbers, serve with a salad and you have an easy meal
