    If you are on a low carb diet and are craving something sweet, try this recipe on for size!


    List of Ingredients


    • 1 C pecan pieces
    • 3/4 C Unsweetened dried coconut
    • 1 C Equal Spoonful
    • 2 T Unsweetened cocoa powder
    • 3 T Butter
    • 2 T Rum
    • 2 t Egg white powder
    • 2 T warm water to dissolve egg white powder


    Instructions


    1. Preheat oven to 350 degrees.
    2. Spread the pecans on a baking sheet and roast in the oven for about 10 minutes, or until they begin to brown. Set aside to cool.
    3. Meanwhile, combine coconut, sweetener and cocoa in a large mixing bowl.
    4. When the pecans have cooled a bit, coarsely chop them.
    5. Add the pecans to the coconut mixture.
    6. Melt butter.
    7. Mix the rum with the melted butter and stir into the combined ingredients.
    8. Put the egg white powder in a small bowl and add the warm water. Beat with a whisk for 2 minutes, until frothy and dissolved.
    9. Mix the egg whites into the combined ingredients.
    10. Form the mixture into little balls.
    11. Leave the candies on a baking sheet for about an hour to air dry.
    12. Store in an airtight container.
