    This is a wonderful recipe, easy and elegant!


    List of Ingredients


    • 6 Boneless/skinless chicken breasts
    • 3/4 C flour
    • Salt and pepper to taste
    • 1 1/2 T dried oregano
    • 1/8 C plus 1 T olive oil
    • 1 C butter
    • 4 1/2 C sliced portabello mushrooms
    • 1 C sun-dried tomatoes
    • 3/4 C packed fresh spinach
    • 1 1/2 C Marsala wine


    Instructions


    1. Place chicken breasts between two pieces of wax paper, and pound to 1/4 inch thick with a meat mallet.
    2. Mix the flour, salt, pepper, and oregano together. Dust chicken with this mixture.
    3. In a skillet, fry chicken in olive oil over medium heat. Cook until done, turning to cook evenly. Set aside, and keep warm.
    4. In the same pan, melt the butter over medium heat. Add mushrooms, sun-dried tomatoes, and Marsala wine. Cook for approximately 10 minutes, stirring occasionally.
    5. Mix in spinach, and cook for about 2 minutes more. Serve sauce over the chicken.
