This is a wonderful recipe, easy and elegant!
List of Ingredients
- 6 Boneless/skinless chicken breasts
- 3/4 C flour
- Salt and pepper to taste
- 1 1/2 T dried oregano
- 1/8 C plus 1 T olive oil
- 1 C butter
- 4 1/2 C sliced portabello mushrooms
- 1 C sun-dried tomatoes
- 3/4 C packed fresh spinach
- 1 1/2 C Marsala wine
Instructions
- Place chicken breasts between two pieces of wax paper, and pound to 1/4 inch thick with a meat mallet.
- Mix the flour, salt, pepper, and oregano together. Dust chicken with this mixture.
- In a skillet, fry chicken in olive oil over medium heat. Cook until done, turning to cook evenly. Set aside, and keep warm.
- In the same pan, melt the butter over medium heat. Add mushrooms, sun-dried tomatoes, and Marsala wine. Cook for approximately 10 minutes, stirring occasionally.
- Mix in spinach, and cook for about 2 minutes more. Serve sauce over the chicken.
