Cilantro Chicken

My own creation, cilantro is one of my favorite herbs
List of Ingredients
- 3 Medium onions, cut into quarters
- 2 T chopped fresh garlic
- 4 T olive oil, divided
- 1 Can (28 oz) whole tomatoes (use mexican flavored)
- 1 4 oz Can whole green chiles, cut into 1" strips
- 1/2 C coarsely chopped fresh cilantro
- 6 Boneless, skinless chicken breasts
- Salt to taste
- Pepper to taste
Instructions
- Saute onions and garlic in 1 T olive oil until softened, about 4-5 minutes. Add tomatoes, green chiles and cilantro. Bring to a boil and then lower heat and simmer for about an hour.
- Pre-heat oven TO 350 F
- Pan fry chicken in remaining olive oil until golden on both sides. Transfer chicken to a baking dish, cover with sauce and bake for about 45 minutes.
Final Comments
This recipe Serves 6 small appetites or 3 large appetites. This is very easy to prepare. Serve with some rice and a salad topped with cheese, green chiles, and lime dressing.
