    Cilantro Chicken

    My own creation, cilantro is one of my favorite herbs


    List of Ingredients


    • 3 Medium onions, cut into quarters
    • 2 T chopped fresh garlic
    • 4 T olive oil, divided
    • 1 Can (28 oz) whole tomatoes (use mexican flavored)
    • 1 4 oz Can whole green chiles, cut into 1" strips
    • 1/2 C coarsely chopped fresh cilantro
    • 6 Boneless, skinless chicken breasts
    • Salt to taste
    • Pepper to taste


    Instructions


    1. Saute onions and garlic in 1 T olive oil until softened, about 4-5 minutes. Add tomatoes, green chiles and cilantro. Bring to a boil and then lower heat and simmer for about an hour.

    2. Pre-heat oven TO 350 F

    3. Pan fry chicken in remaining olive oil until golden on both sides. Transfer chicken to a baking dish, cover with sauce and bake for about 45 minutes.



    Final Comments


    This recipe Serves 6 small appetites or 3 large appetites. This is very easy to prepare. Serve with some rice and a salad topped with cheese, green chiles, and lime dressing.
