Ginger-lime Chicken Salad

Recipe Introduction
You can use purchased roast chicken to save time or if you have it left-over chicken.
List of Ingredients
- 2 T Lime juice
- 4 T Chopped red onion
- 2 t Grated fresh ginger
- 2 Cloves garlic, minced
- 1/2 C Mayonnaise
- 2 C Coarsely chopped chicken breast
- 2 Stalks celery, cut into thin strips (1 cup)
- 1/4 C salted pumpkin seeds
Instructions
- In a blender container combine lime juice, onion, ginger, garlic, and mayonnaise. Cover and blend until smooth.
- In a medium bowl combine mayonnaise mixture with chicken, tossing to coat. Cover and chill.
- Divide celery strips among 4 salad bowls. Top with chicken mixture. Sprinkle chicken with the salted pumpkin seeds.
- Makes 4 servings.
Final Comments
This is an absolutely delicious salad.
