    Green Tomatoes with Goat Cheese

    Recipe Introduction


    Puts all those extra green tomatoes you have to use. Greek feta cheese or chevre cheese work equally as well.


    List of Ingredients


    • 4 Medium green tomatoes
    • 1 T balsamic vinegar
    • 2 t Minced fresh oregano leaves
    • 1 C crumbled goat cheese (feta or chevre)
    • 4 t Olive oil
    • Salt and coarsely ground fresh black pepper to taste


    Instructions


    1. Cut tomatoes into 1/2 inch thick slices. Coat a shallow baking dish with oil. Place tomatoe slices in a single, overlapping layer, in the bottom of the baking dish.
    2. Sprinkle tomatoes with vinegar, scatter the minced oregano over the tomatoe slices. Top with crumbled goat cheese and drizzle with olive oil.
    3. Broil 5-8 inches below a pre-heated broiler until tomatoes are hot and the cheese is just starting to brown, about 7-8 minutes. Season with salt and pepper to taste.

    These are really, really good with Italian or Greek foods!
