Chiles Rellenos
Here is an authentic Mexican recipe for Chiles Rellenos, taken from "Mexican Cookbook", copyright 1934, by the University of New Mexico Press. Book is long out of print.
List of Ingredients
- 1Lb Roundsteak, Sauteed In 3 Tablespoons Butter
- 2Tablespoons Lard
- 1/2Cup Sugar
- 1/4Teaspoon Cloves
- 1/4Teaspoon Cinnamon
- 1/2Teaspoon Salt, To Taste
- 1/2Cup Raisins
- 6 Green chiles, Chopped
- 1/2 Cup Vinegar or red wine
- 3 Eggs
Instructions
- Boil round steak and grind.
- Brown in hot lard.
- Add sugar, spices, salt, raisins, chiles, and liquid.
- Mix thoroughly and mould into egg-shaped croquettes.
- Beat egg whites very stiff. Add yolks and beat.
- Roll each croquette in flour, then in beaten egg
- And fry in deep fat.
