    Chicken Breast In Champagne


    List of Ingredients


    • 2 Chicken Breasts,Halved, boned and skinned
    • 1 Carrot,Chopped Fine
    • 1 Small Onion,Choppped Fine
    • 3 Large Mushrooms,Chopped Fine
    • 2 T Butter
    • 1 c Champagne -- or dry white wine
    • Salt and Pepper,To Taste
    • -----For The Sauce-----
    • 1/2 c Heavy Cream
    • 1/4 c Champagne
    • Salt And Pepper,To Taste


    Instructions


    1. In a heatproof casserole, make a bed of carrot, onion, and mushrooms.
    2. Add butter cut into thin slices and add champagne or wine
    3. Place chicken breasts on top of the mixture Sprinkle the chicken with salt and pepper.

    4. Cover and bake chicken in a moderate oven 325F Basting frequently with the liquid from the casserole for 50 to 60 minutes or until it is tender.

    5. Remove chicken to a platter and keep warm
    6. Cook sauce uncovered over moderate heat until it is reduced by half.
    7. Stir in heavy cream and champagne or wine and pour sauce through a sieve
    8. Season with salt and pepper and a little finely chopped parsley
    9. Pour sauce over the chicken breasts and garnish the platter with braised celery and sauted pimentos.
