    Mama's Cranberry Congealed Salad

    List of Ingredients


    • 1 bag fresh cranberries
    • 1& 1/2 -2 cups sugar
    • 3 stalks celery-cubed
    • 2 & 1/2-3 cups chopped pecans
    • 3 small pkg. jello (red jello-strawberry, cherry) I mix mine.
    • 1 lge. can crushed pineapple
    • 1pkg. 8 or 12 oz. cream cheese


    Instructions


    1. Place cranberries in sauce pan or pot & just cover with water, about 2-2&1/2 cups. Add sugar, bring to boi

    2. boil, then lower heat to simmer or soft boil for about 20-30 min. & all berries have popped. Set aside to

    3. cool a little. Add chopped pecans, celery, pineapple & jello(ea. pkg. dissolved in 1 cup boiling water.

    4. Soften cream cheese with juice of pineapple & put in microwave 40 sec. to soften. Then beat with whisk or

    5. mixer until smooth. Gradually add to cranberry mixture stirring with spoon til dissolved & lumps are

    6. gone. Pour into large Pyrex dish or any large dish. Refrigerate 4-6 hours or overnight. Enjoy!



    Final Comments


    This can be eaten as a salad or a dessert! Mama always made it at Christmas, but it could be enjoyed in the summer months, also.
