Banana Fruit Bread

1 3/4 cup all purpose flour
1 C. sugar
2 1/2 tsps baking powder
1 tsp salt
1 cup mashed ripe Banana
1/2 cup Milk
1 egg well beaten
2 Tbls Oil
Cinnamon to taste
1 cup chopped Walnuts or Pecans
1 cup dried Cranberries
1 cup Raisins
Recipe
Mix flour with sugar, baking powder and salt in one bowl (small size). In a large bowl, combine the banana, milk, egg and oil (or shortening). Add the flour mixture, stirring just until all flour is moistened. Then, add the optional items and mix well. Pour into a greased 9 x 5 loaf pan, or you can use a muffin pan (greased or with paper cup liners). Bake at 350 degrees, for about an hour, or until you test it in center and it comes out clean. Cool in pan for 10 minutes, then remove and finish cooling on a rack.
