    if using Stevia to replace sugar, use 3/4 tsp Stevia for 1 cup of sugar.

    Try mixing Stevia into liquid to dissolve, & distribute evenly)

    List of Ingredients




    ESPRESSO SPREAD:
    4 oz. cream cheese, cubed
    1 Tablespoon sugar (OR just a teeeny bit of Stevia powder - use sugar the 1st time you make this)
    1/2 tsp. instant coffee granules
    1/2 teaspoon vanilla extract
    1/4 cup miniature semi-sweet chocolate chips

    MUFFINS:
    2 cups all-purpose flour
    3/4 cup sugar
    2 1/2 tsp. baking powder
    1 tsp. ground cinnamon
    1/2 tsp salt
    1 cup milk
    2 Tablespoons instant coffee granules
    1/2 cup butter or margarine, melted
    1 egg
    1 tsp. vanilla extract
    3/4 cup miniature semi-sweet chocolate chips

    Recipe



    In a food processor or blender, combine spread ingredients; cover & process until well blended.
    Cover & refrigerate until serving.

    In a bowl, combine flour, sugar , baking powder, cinnamon, and salt.


    In another bowl, stir milk & coffee granules until the coffee is dissolved.
    Add butter, egg, and vanilla.
    Stir into dry ingredients until just moistened.
    Fold in chocolate chips.

    Fill greased or paper-lined muffin cups 2/3 full.

    Bake @ 375 degrees for 17 - 20 minutes, or until muffins test done.

    Cool for 5 minutes on wire racks before removing from pans.

    Serve with espresso spread.

    About 14 muffins & 1 cup of spread
