    Recipe Introduction

Legend has it that during the civil war, many cooks fried these bites of corn batter over a campfire. Then they would toss them to hungry dogs to stop their barking. So they became known as Hush Puppies

    List of Ingredients

    2 cups Yellow corn meal
    1/4 cup all purpose flour
    1 tsp baking powder
    1 tsp baking soda
    1 tsp salt
    1 small onion, finely chopped
    1 large egg
    1 1/4 cup buttermilk
    Corn oil

    Recipe

In a med. bowl, mix the cornmeal, flour, baking powder, baking soda, and salt. Stir in the onion. Whisk together the egg and buttermilk. Add to the cornmeal mixture and stir just until well blended.

In a 12 inch skillet heat 1 inch of oil. Drop the batter by rounded teaspoonfuls into the hot oil. Cook for 2 to 3 minutes on each side until golden brown.
Drain on paper towels. Serve hot.
