    Cranberry Banana Muffins, Whiz-Bang Banana Muffins

    Lightened Banana Nut Bread

    Ingredients:
    1/4 cup butter, softened
    3/4 cup sugar
    1/4 cup low-fat yogurt
    1 egg
    1 egg white
    2 ripe bananas, mashed
    1/4 cup low-fat milk
    2 cups flour
    1/2 teaspoon baking soda
    1/2 teaspoon baking powder
    1/4 teaspoon salt
    1/4 cup chopped nuts, toasted

    Directions:
    Preheat the oven to 350 degrees. Coat a loaf pan with nonstick cooking spray; set aside. Toast the nuts by placing them on a cookie sheet in the 350-degree oven. Bake until lightly browned, 5-7 minutes.

    Cream the butter and sugar in a large bowl. Stir in the yogurt, then add the egg and the egg white, stirring well after each addition. Add the bananas, then the milk, blending well.

    Sift the flour, baking soda, baking powder and salt together. Add to the creamed mixture; blend together, but do not over beat, as this will toughen the bread. Add the nuts and pour into the prepared pan.

    Bake for about 1 hour, or until a toothpick inserted into the center of the cake comes out clean. Turn out onto a rack to cool. For best results, let it cool before cutting . Makes 16 servings.

    Each serving contains: 156 calories, 5g fat, 20 mg cholesterol, 129 mg sodium, 26g carbohydrates, 3g protein and 1g fiber

    Whiz-Bang Banana Muffins
    Ingredients:
    1 cup all-purpose flour
    1/2 cup quick-cooking oatmeal
    1/4 cup packed brown sugar
    1 tablespoon baking powder
    1/2 teaspoon cinnamon
    1/8 teaspoon salt
    Nonstick cooking spray
    1/3 cup milk
    1 egg
    2 tablespoons cooking oil
    1 large ripe banana, cut up

    Preheat the oven to 400 degrees. In a large bowl stir together the flour, oatmeal, brown sugar, baking powder, cinnamon, and salt. Set aside. Lightly coat muffin pan with cooking spray or grease with shortening.

    In a blender container combine milk, egg, and oil. Cover and blend smooth.
    With blender running, add banana and blend into mixture. Pour into dry ingredients and stir just until moistened. Fill muffin pans 2/3 full. Bake in the 400 degree oven about 20 minutes or until a wooden toothpick inserted in center comes out clean. Makes 10 to 12

    Cranberry Banana Muffins

    Ingredients:
    Two whole egg whites -- slightly beaten
    3 tablespoons fat-free sour cream
    3 tablespoons honey
    3 tablespoons molasses
    3 tablespoons orange juice, canned
    1 teaspoon pure vanilla extract
    1 cup bananas, mashed
    1 cup unbleached flour, sifted
    1 tablespoons orange peel, grated
    1/2 teaspoon baking powder
    1/2 teaspoon baking soda
    1 cup cranberries, chopped

    Directions:
    Preheat oven to 350-degrees.
    Prepare muffin pans with cooking spray and flour; set aside.

    In a mixing bowl, combine egg whites, sour cream, honey, molasses, orange juice, vanilla extract, and bananas. In another mixing bowl, combine flour, baking powder, baking soda, and cranberries.

    Use an ice cream scoop to fill medium muffin pans and bake for 20 to 25 minutes for medium pans. Recipe makes 12 servings.
