Cake, Chocolate Zucchini Rum

Rich, moist, DECADENT
(careful on the rum a little goes a long way!)
List of Ingredients
3/4 cup margerine (or butter)
2 cups sugar
3 large eggs
2 cups lightly packed shredded zucchini
1/3 cup rum, brandy or water (or 1/2&1/2)
2 1/2 cups flour
1 cup chopped walnuts
1 cup chocolate chips
1/2 cup baking cocoa
2 1/2 tsp baking powder
1 tsp salt
3/4 tsp cinnamon
1/2 cup milkRecipe
Cream butter and sugar
Beat in the eggs
Stir in the zucchini and rum (brandy or
water).
In a separate bowl, mix the dry
ingredients.
Stir them into the egg mixture along with the
milk.
Spread into well greased and Cocoaed 10-in.
tube pan and bake at 350° for 50 to 55
minutes.
Let cool in pan on a rack for 15 minutes.
Then remove, invert and drizzle with glaze:
Mix until smooth:
1 2/3 cups powdered sugar
3 Tbsp rum (or water) or 1/2&1/2
