    Irish Potato Candy (from Ireland)

    Round balls, which have real potato in them, but you'll never tell! Rolled in Cinnamon, a traditional St. Patrick's Day sweet in Ireland, as well as in areas with lots of Irish population. This candy in Philly (PA) sells for $6-$7lb.! at candy stores. Cheap to make, and fun!

    List of Ingredients




    1 medium Potato
    1 box of Confectioner's Sugar (10X), or if bulk, 2 C.
    1 bag or box of Sweetened Cocoanut
    1 tsp. Vanilla flavoring
    1 box of Cinnamon, or plenty to roll balls in
    Dash Salt

    Recipe



    Boil Potato, wait until cool, then peel and mash with a fork, in a medium large mixing bowl. Add the 10X Sugar gradually, while stirring with fork. Add the Cocoanut, also gradually, while stirring, add Salt and Vanilla. The dough must be firm and hard before made into balls (small, like a ping pong ball). When dough is hard, and already rolled into balls, drop each one into the cinnamon and roll until covered. When done, put into a tin with wax paper, or into a ziplock bag. Be careful not to squash them if putting into a bag.
