Good way to get your Greens
List of Ingredients
1 Green pepper cleaned & diced
1 med Onion chopped
2 stalks Celery chopped
2 med Potatoes chopped
1 Cup Split Peas rinsed
2 Bay Leaves
6 Cups Water
4 Chicken Cubes
2 Med Zucchini Diced
1 Med stalk Broccoli chopped
1 bunch french Spinach washed & chopped
1 tsp Basil
1/4 tsp black pepper
1/8 tsp red pepper
Salt to taste
Recipe
Place onion, celery, potatoes, split peas & bay leaves in a large dutch oven pan, with the 6 cups of water & chicken cubes. Bring to a boil. lower heat, cover & simmer 1 hr.
Remove bay leaves, add zucchini, broccoli, spinage, basil & peppers, simmer 20 min. or until veggies are tender.
(With a hand held blender) blend until smooth. Salt to taste. (Or use a large slow cooker, put all ingredents in pot & cook on high for 4 to 6 hrs on high, blend until smooth) Serve with Crusty bread, (freezes well)
