Used to coat fish, chicken, apples, onion rings etc.(I use it to make chicken balls and then toss with sweet and sour sauce). Can be halved if not feeding an army

I cup flour
2 tsp baking powder
1 tsp salt
2/3 cup milk
1 tbsp shortening
2 eggs

Mix it altogether and use as a coating for deep frying.
